Welcome to Chianti! 
Here you will be met by your gracious hosts Silvano and Rita at their 50 acre organic farm in the heart of Chianti’s cypress forest. Before your cooking class begins, you’ll spend time touring the estate’s vineyard and cellar which produces quality Chianti Classico, Riserva, Super Tuscans and a medieval dessert wine. Visit the balsamic cellar for a tasting of various aged vinegars from 2 to 30 years old. The air is filled with aromas of lavendar and rosemary that is used to create essential oils and bath products. Sample honey that is pollinated by the bee farm from the flowers of lavendar, wild heather, acacia blossom and chestnut.
Hands-On Cooking Course - One Day or Multi-Day
These wonderful hands-on cooking classes are filled with delicious traditional Tuscan recipes and their famous fresh pasta like papperdelle, tagliatelle, gnocchi with gorgonzola and a typical ravioli from the Maremma region that is stuffed with fresh ricotta and herbs. You will prepare local meat and vegetable dishes using fresh produce and herbs from their garden and roll out pizzas and ciaccini-an artisan bread. (If you’re real lucky you may even make Schiacciata, a focaccia bread with grapes and rosemary infused olive oil. It’s only prepared during harvest season and you pick the ripest grapes from the estates vineyard.)
Finish off your multi-course meal with fruit tarts, grandmother’s traditional cookies, Rita’s famous Tiramisu and for the dolce finale...30 year aged balsamic vinegar splashed over vanilla gelato! Enjoy all of this while sipping Chianti on the veranda with a spectacular view of the valley.
