Ischia, Italy
Ischia is a volcanic island in the Tyrrhenian Sea,
at the northern end of the Gulf of Naples. Some sights worth seeing are
the Church of Soccorso (a tiny white-washed church located in the square
on the Punta del Soccorso in Forio, that looks out onto the crystal
clear sea), and Castello Aragonese (a castle located on a small island
near Ischia Ponte). There are many wonderful beaches located here as
well, namely Lido di Ischia and Cartaromana beach.
Sorrento, Italy
This Mediterranean land has been depicted, described and immortalized in
song by artists, poets and travelers from every period of history.
Along the coast, rugged and inaccessible cliffs soar upwards between
beautiful beaches, hidden caves, enchanting bays and sheltered coves.
Whereas inland, the high plains, rolling hills and lofty mountains are
seared by deep valleys to create a truly unique landscape in which man
has also left a clear sign of his remarkable work: the more impervious
areas have been modeled into the now-famous terraces, those huge steps
descending into the sea on which man has planted vineyards and groves of
orange, lemon and olive trees. There are the gardens of delight which
exude an inebriating perfume of blossom in spring. The mild climate and
predominantly fine weather all year round make the Sorrentine Penisula
an ideal destination in any season. The first town in the Peninsula is
Vico Equense with its Giusso Castle on the coast and the austere Mont
Faito (1400 metres high) which allows you to pass from the sea to the
mountain in just a few minutes. Next we find Meta di Sorrento, a town
hidden in a maze of alleyways whose small hamlets and sun-drenched
beaches are a must for visitors. Piano di Sorrento is a bustling town
which harmoniously blends its sea-faring vocation with its rural
identity and its role as a major shopping centre. The hill rising up
behind the town is traversed by narrow roads flanked by high walls that
enclose centuries-old orange and lemon groves.
Messina, Italy
Zakynthos,
Greece
Zakynthos, the third largest of the Ionian Islands, covers an area of
158 square miles and its coastline is roughly 76 miles in length. The
island is named after Zakynthos, the son of a legendary Arcadian chief
Dardanus. The name, like all similar names ending in -nthos, is
pre-Mycenaean or Pelasgian in origin. Monenvasia, Greece Situated near
the site of ancient Sparta, the ancient castles and fortresses, faded
palaces and narrow byways are more reminiscent of the city's Byzantine
and Venetian days.
Athens, Greece
Above the city, looking out towards the blue Aegean, stands the
Acropolis. Here lie the ruins of a culture 2,500 years old: the
Propylaea; the Temple of Athena Nike; the Erechtheum temple, and, most
famous of all, the Parthenon.
Meanwhile, modern Athens buzzes busily below, a city of chic
restaurants, lively bazaars, sophisticated banking, historical museums,
and the sights and smells of the Plaka district.

Rick Moonen
Creator/Executive Chef
An advocate for sustainable fishing and seafood,
Chef Rick Moonen’s passion for conservation has led him to national
acclaim.
A native New Yorker, Moonen graduated first in his
class from the Culinary Institute of America in Hyde Park, New York in
1978. He apprenticed at L’Hostellerie Bressane in Hillsdale, New York
where he built both his confidence and experience working side by side
with Chef Jean Morel.
From there, Moonen assumed the position of saucier
at Manhattan’s La Cote Basque. This experience was followed by two
years at Le Cirque working with the legendary Alain Sailhac. In the
ensuing years, Moonen continued his career in New York, becoming
executive chef at some of New York’s most iconic restaurants, including
Le Relais, Century Café and Chelsea Central before joining Buzzy O’Keefe
at The Water Club.
After six years, Moonen left to become executive
chef and partner at Oceana where he helped garner the restaurant
national recognition and three stars from The New York Times. His next
step was partnering to create Molyvos, a Greek fish house, which would
further demonstrate the range of his culinary skills. Here he created
Greek cuisine on another level, and Molyvos was the first Greek
restaurant to earn three stars from The New York Times.
After five years Moonen decided to develop his own restaurant. As
executive chef and owner of New York City’s rm, Moonen earned critical
acclaim and, once again, received three stars from The New York Times.
In 2005, he was drawn to the rapidly developing culinary scene in Las
Vegas and closed his doors in New York City to bring his unique flavor
and specialties of the seafood world to the West Coast
In February 2005, Chef Moonen opened his
multi-level restaurant Rick Moonen’s rm seafood at Mandalay Bay in Las Vegas. The lower
level of the restaurant offers regional coastal favorites and a
bountiful world-class raw bar in a bustling market atmosphere. The
upper level offers a more elegant experience featuring Chef Moonen’s
inventive tasting and à la carte menus.
When not behind the stove, Moonen can be
found throughout the country educating about the dangers of over fishing
and ocean conservation. As an industry leader, he has testified for
environmental and sustainable policy issues in Washington, DC and New
York. He is a founding member of the Seafood Choices Alliances, which
named him “Seafood Champion” in 2006, as well as an active member of the
Wildlife Conservation Society, Seaweb, and a chef’s advisory board
member of Ecofish. He also has served as a spokesperson for American
caviar, a more environmentally sound alternative to the Caspian Sea
varieties, and he is often quoted for his expertise with various
indigenous and exotic fish.
Moonen is happiest doing the things that
originally brought him to a culinary career in cooking, teaching and
writing about fish and seafood. His current passion has been the
writing of his first cookbook, Fish Without a Doubt, a practical,
hands-on guide to buying, preparing and cooking a wide array of fish.
Fish Without a Doubt was released April 2008 by Houghton-Mifflin.

The Restaurant
The Restaurant provides
an unpretentious, elegant atmosphere in which to enjoy phenomenal food,
excellent wines, and impeccable service. Open seating and plenty of
tables for two provide maximum flexibility and assure the happiness of
all guests. Los Angeles’ Joachim Splichal developed most of the
sensational and inventive menus, though light and vegetarian options
were the brainchild of cooking light guru Jeanne Jones.
Degrees
Bright and airy,
located just above the bow, Degrees is an intimate and exclusive
alternative to the Restaurant and Veranda. Reservations are required for
each of the themed nights—which range from steakhouse to French Bistro.

Veranda’s sumptuous breakfast and lunch buffets (with some
made-to-order items) and full service dinners a special treat.
